Low carb granola

Delicious low carb granola

Breakfast cereal is one of the things that is apparently irreplaceable on a low carb diet but this granola is way tastier than anything shop-bought. You could have it with some almond or soya milk to replace your cornflakes, but I think it comes into its own with some full-fat greek yogurt and fresh berries. This recipe serves four as a yogurt topping.

Ingredients
  1. 15g unsalted butter
  2. 1 tsp mixed spice
  3. 20g flaked almonds
  4. 20g sunflower seeds
  5. 20g chopped brazil nuts
  6. 20g pumpkin seeds
  7. 1/4 tsp xylitol (if needed)
  8. 1/2 tsp almond essence
Instructions
  1. Melt the butter and combine with all the other ingredients.
  2. Spread the mixture out on a lined baking sheet.
  3. Bake at 180 deg C for 10 minutes (keep an eye on them as they burn easily.)
  4. Leave to cool before serving and store in an air-tight jar.
