These feel very indulgent and are even more delicious topped with whipped cream. The ground almonds gives them a heavier feel than standard muffins, but they are a pretty good substitute.As always, you can add some sweetener if you feel they need it.

Ingredients
  1. 100g ground almonds
  2. 1 tsp baking powder
  3. 1 tsp vanilla extract
  4. 1 tsp coffee granules dissolved in a small amount of hot water
  5. 20g butter at room temperature (or melted and cooled)
  6. 2 tbs double cream
  7. 2 eggs, beaten
Instructions
  1. Beat all the ingredients together.
  2. Divide between 5 muffin cases and sit them in a muffin tray.
  3. Bake at 180 deg C for 20 minutes.
  4. Allow to cool and decorate with whipped cream if desired.
