Low carb bread

low carb flaxseed bread

A Ploughman’s lunch. A bacon sandwich. These things are now possible for us low-carbers thanks to the miracle of ground flax seed.

I’ve yet to create a recipe that toasts, though. Anyone?

Ingredients
  1. 220g ground flax
  2. 1 tbs baking powder
  3. 1/4 tsp salt
  4. 5 eggs
  5. 40ml groundnut oil
  6. 40ml almond oil
  7. 125ml water
Instructions
  1. Whisk all the ingredients together.
  2. Pour into a shallow baking tray lined with oiled greaseproof paper (my tray is 34x23cm.)
  3. Bake at 180deg for 15 minutes.
  4. Cool, turn out and cut into 16 equal pieces.
