Ingredients
  1. 2 tbsp double cream
  2. 1 egg
  3. 0.5g Stevia (about a third of a small sachet)
  4. Pinch of nutmeg
  5. 5g butter for frying
Instructions
  1. Whisk it all together and fry in a non-stick frying pan with a little butter if necessary, before putting under the grill to brown the upper side.
  2. Fill with whipped cream and berries (adds around 4g carb if you choose raspberries.)
Notes
  1. These are more fragile than normal pancakes - keep them small and don't bother attempting to toss. After several failed attempts, I now do the tops under the grill. These quantities will make three small pancakes.
